Mine's Note about Kebab Restaurants

Kebabs are various different kinds of meat dishes in Turkish Cuisine. Most of the meat contain high fat, therefore they are grilled. The most common type of meat is lamb or veal. The meat is first marinated with some spices, olive oil and become much softer. It's usually served with fresh vegetables, salads, rice or bulgur rice. The well-known examples of kebabs are Shish-kebab (made of lamb or chicken grilled on skewers), Adana Kebab (spicy meat patties on skewers), Urfa Kebab (non-spicy form of Adana Kebab), Doner Kebab (like Greek Gyro), Tandir Kebab (pit roasted lamb), Ali Nazik Kebab (browned meat on eggplant pureé with garlic yoghurt), Begendi Kebab ( chunks of beef and onions cooked in tomato sauce, served on egglant pureé) .There are tens of different kebabs which are indigenous to different regions of Turkey; for instance Tepsi Kebab (tray kebab), Testi Kebab (cooked in pots), Guvec (cooked in pots).

Kebab Restaurants also have a different ritual like fish restaurants. If one goes to a Kebab Restaurant, he or she does not only order one single dish and leave the restaurant. There are tens of appetizers that one first enjoys. Some examples of these appetizers are fresh seasonal salad, Icli Kofte (meat balls with spices, covered with bulgur rice and deep fried), Cig Kofte (very spicy, steak tartar a la turca), Patlican Kozde (grilled egglants in olive oil sauce), different types of cheese and pide (pita bread). The most common drink in Kebab Restaurants is Raki (similar to Greek Ouzo) but coke, fresh orange juice or ayran are also served.

It's a great experience to try a Kebab Restaurant when you visit Istanbul because they are really very delicious and special.
